Inspired by Edinburgh’s Pentland Hills, where Covenanters hid and may well have enjoyed similar ‘white’ loaves 200 years ago.
Baked in 2kg loaves (rather than 7lb like many families would have had) for enhanced flavour and keeping qualities. The particles of bran add a sweetness and depth to the flavour.
As 2kg is a little much for the average family this loaf can be cut into halves or quarters. If kept properly this loaf can be enjoyed for up to a week and is a Bakery Andante favourite.
